1 lb (450g) boneless, skinless chicken thighs

1/2 cup honey

1/4 cup soy sauce

4 cloves garlic, minced

1 tsp fresh ginger, grated

1 tbsp rice vinegar

1 tsp sesame oil

1/2 tsp red pepper flakes (optional)

2 tbsp cornstarch

2 tbsp water

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Cooked rice (for serving)

Instructions
 

Marinate the Chicken: In a large bowl, combine honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, and red pepper flakes. Mix well. Add the chicken thighs, coating them thoroughly in the marinade. Cover and refrigerate for at least 30 minutes (or up to 2 hours for maximum flavor).

    Cook the Chicken: Preheat a large skillet or frying pan over medium heat. Add the marinated chicken thighs to the pan, reserving the marinade. Cook the chicken for about 6-7 minutes on each side or until cooked through and golden brown.

      Thicken the Sauce: While the chicken is cooking, pour the reserved marinade into a small saucepan and bring it to a boil. In a small bowl, mix cornstarch and water to create a slurry. Slowly whisk the slurry into the boiling marinade until it thickens, about 1-2 minutes.

        Combine Chicken and Sauce: Once the chicken is cooked, pour the thickened sauce over the chicken in the skillet. Stir well to coat the chicken evenly and cook for an additional minute to heat through.

          Serve: Transfer the chicken to a platter. Garnish with chopped green onions and sesame seeds. Serve hot over cooked rice, drizzling any leftover sauce on top.
