Ingredients

2 cups mashed sweet potatoes (about 2 medium sweet potatoes)

1 cup granulated sugar

1/2 cup brown sugar

1/2 cup unsalted butter, softened

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1/4 cup milk

3 large eggs

1 pre-made pie crust (store-bought or homemade)

Whipped cream (for serving, optional)

Crushed pecans (for garnish, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare Sweet Potatoes: Peel and cube sweet potatoes. Boil in salted water until fork-tender, about 15-20 minutes. Drain and mash until smooth. You’ll need about 2 cups.

Mix Ingredients: In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, softened butter, vanilla extract, cinnamon, nutmeg, and salt. Mix until well combined and creamy.

Add Eggs and Milk: Add the milk and eggs to the sweet potato mixture. Beat with an electric mixer or whisk until the mixture is smooth and homogeneous.

Fill Pie Crust: Pour the sweet potato filling into the prepared pie crust, smoothing the top with a spatula.

Bake: Bake in the preheated oven for about 55-60 minutes, or until the pie is set and a toothpick inserted in the center comes out clean.

Cool: Once done, remove the pie from the oven and let it cool on a wire rack for at least an hour before slicing.

Serve: Serve slices of the sweet potato pie warm or chilled, topped with whipped cream and crushed pecans if desired.
