1 cup mashed sweet potatoes (about 1 medium sweet potato)

1 cup cream cheese, softened

1/2 cup granulated sugar

1/4 cup brown sugar

1 large egg

1 tsp vanilla extract

1 1/2 cups all-purpose flour

1 tsp baking powder

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp salt

1 cup white chocolate chips

1/2 cup chopped pecans or walnuts (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a medium bowl, combine the mashed sweet potatoes, softened cream cheese, granulated sugar, brown sugar, egg, and vanilla extract. Mix until smooth and creamy.

      In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.

        Gradually add the dry ingredients to the wet mixture, mixing until just combined.

          Fold in the white chocolate chips and chopped pecans/walnuts (if using).

            Scoop tablespoon-sized portions of dough onto the prepared baking sheet, leaving some space between each cookie.

              Bake for 12-15 minutes or until the edges are set and the tops are slightly golden.

                Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
