4 cups fresh corn kernels (or frozen, thawed)

1 cup milk

1/2 cup honey

3 large eggs

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground black pepper

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1 cup panko breadcrumbs

2 tablespoons unsalted butter, melted

Fresh parsley, chopped (for garnish)

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with cooking spray or butter.

    In a large mixing bowl, combine the corn kernels, milk, honey, and eggs. Whisk until well blended.

      In a separate bowl, whisk together the flour, baking powder, salt, and black pepper. Gradually add the dry ingredients to the corn mixture, stirring just until combined.

        Fold in the shredded cheddar cheese, making sure it is evenly distributed throughout the mixture.

          Pour the corn batter into the prepared baking dish, spreading it out evenly.

            In another bowl, combine the panko breadcrumbs, grated Parmesan cheese, and melted butter. Mix until the breadcrumbs are thoroughly coated.

              Sprinkle the breadcrumb-Parmesan mixture evenly over the corn casserole, covering the top completely.

                Bake in the preheated oven for about 40-45 minutes, or until the casserole is set and the top is golden brown and crispy.
