1 lb chicken breast, diced

1 ripe mango, peeled and diced

2 tablespoons soy sauce

1 tablespoon honey

1 tablespoon sriracha (adjust to taste)

1 tablespoon olive oil

3 green onions, sliced

1 red bell pepper, diced

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon lime juice

1 head of butter lettuce or iceberg lettuce, leaves separated

Fresh cilantro, for garnish

Sesame seeds, for garnish

Salt and pepper, to taste

Instructions
 

Prepare the Chicken: In a medium bowl, toss the diced chicken with salt, pepper, and a tablespoon of lime juice.

    Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

      Create the Sauce: In the same skillet, add the minced garlic, grated ginger, and diced red bell pepper. Sauté for 2-3 minutes until the peppers soften.

        Add Mango and Sauce: Stir in the diced mango, soy sauce, honey, and sriracha. Let everything cook together for about 3-4 minutes until the mango softens slightly and the sauce is well combined.
