Ingredients
  

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup pineapple chunks (fresh or canned)

1 bell pepper (red or yellow), sliced

1 cup sweet and sour sauce (store-bought or homemade)

2 tablespoons soy sauce

1 tablespoon apple cider vinegar

1 tablespoon honey

1 teaspoon ginger, grated

2 cloves garlic, minced

1 cup broccoli florets

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

3 tablespoons vegetable oil (for frying)

Cooked rice, for serving

Sesame seeds, for garnish

Green onions, sliced, for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine chicken pieces, soy sauce, ginger, garlic, and apple cider vinegar. Let it marinate for at least 30 minutes.

    Prepare the Sauce: In a separate bowl, mix together sweet and sour sauce and honey. Set aside.

      Stir-Fry: Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

        Sauté the Veggies: In the same skillet, add the remaining tablespoon of oil. Toss in the sliced bell pepper and broccoli florets. Sauté for about 4-5 minutes until they are slightly tender but still crisp.

          Combine Everything: Return the chicken to the skillet with the vegetables. Add the pineapple chunks and the sweet and sour sauce mixture. Stir well to combine.

            Thicken the Sauce: Pour the cornstarch slurry into the skillet and stir continuously until the sauce thickens and coats the chicken and veggies nicely, about 2 more minutes.

              Serve: Remove from heat and serve the sweet and sour chicken over cooked rice. Garnish with sesame seeds and sliced green onions.
