2 cups all-purpose flour

1 cup granulated sugar

1/2 cup packed brown sugar

1 teaspoon baking powder

1 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1 cup buttermilk

1/2 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups chopped pecans (toasted for extra flavor)

1/2 cup raisins (optional)

1/3 cup maple syrup (for drizzling on top)

Instructions
 

Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan with butter or cooking spray.

    In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.

      In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract until smooth.

        Combine the wet ingredients with the dry ingredients, stirring just until the mixture is moistened (do not overmix). Gently fold in the chopped pecans and raisins, if using.

          Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

            Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean. If the top begins to darken too much, tent it with aluminum foil during the last 15 minutes of baking.

              Remove from the oven and allow to cool in the pan for about 10 minutes. Then, transfer the bread to a wire rack to cool completely.

                Drizzle maple syrup on top just before serving for an extra sweet touch.
