For the Filet Mignon:

2 (8 oz) filet mignon steaks

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

2 tablespoons unsalted butter

Fresh thyme or rosemary sprigs for garnish (optional)

For the Shrimp and Lobster Cream:

1 cup cooked lobster meat, chopped

1 cup shrimp, peeled and deveined

1 tablespoon olive oil

2 cloves garlic, minced

1 small shallot, finely chopped

1 cup heavy cream

½ cup white wine (such as Chardonnay)

1 tablespoon lemon juice

¼ teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

Chopped fresh parsley for garnish

Instructions
 

Prepare the Filet Mignon:

    - Take the filet mignon steaks out of the refrigerator and let them come to room temperature for about 30 minutes.

      - Preheat your oven to 400°F (200°C).

        - Season both sides of the steaks generously with salt and pepper.

          Sear the Steaks:

            - In a large oven-safe skillet, heat the olive oil over medium-high heat until it shimmers.

              - Place the steaks in the skillet and sear for about 3-4 minutes on each side, until a nice brown crust forms.

                - Add the butter to the skillet and baste the steaks with the melted butter for additional flavor.

                  Finish in the Oven:

                    - Transfer the skillet to the preheated oven and roast the steaks for an additional 5-7 minutes, or until they reach your desired level of doneness (135°F for medium-rare).

                      - Remove from the oven and let the steaks rest for 5 minutes before serving.

                        Prepare the Shrimp and Lobster Cream:

                          - In a medium skillet, heat the olive oil over medium heat. Add the garlic and shallot, sautéing until fragrant and translucent (about 2-3 minutes).

                            - Add the shrimp and cook until they are pink and opaque, about 3-4 minutes. Stir in the lobster meat.

                              - Pour in the white wine and lemon juice, raising the heat to medium-high and letting it simmer for 2-3 minutes to reduce slightly.

                                - Lower the heat and add the heavy cream, stirring to combine. Sprinkle in the smoked paprika and season with salt and pepper to taste.

                                  - Simmer until the sauce has thickened slightly, about 5-7 minutes.

                                    Serve:

                                      - Slice the filet mignon and plate it alongside a generous portion of shrimp and lobster cream.

                                        - Garnish with chopped parsley and fresh herbs, if desired.
