Ingredients
  

1 cup orzo pasta

1 cup vegetable broth

1 cup water

1 cup sun-dried tomatoes, chopped (oil-packed for extra flavor)

8 oz Boursin cheese (herb and garlic)

1 cup spinach, roughly chopped

1/2 cup grated Parmesan cheese

1/4 cup olive oil

2 cloves garlic, minced

1 teaspoon dried Italian herbs (basil, oregano, thyme)

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Orzo: In a medium pot, combine the vegetable broth and water. Bring to a boil and add the orzo. Cook for about 8-10 minutes until al dente, then drain and set aside.

      Sauté the Spinach: In a large oven-safe skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the chopped spinach and cook until wilted, about 2-3 minutes.

        Mix Ingredients: In the skillet with spinach, stir in the chopped sun-dried tomatoes, cooked orzo, and Boursin cheese. Mix until the cheese is melted and evenly combined.

          Season the Mixture: Add the dried Italian herbs, salt, and pepper to the orzo mixture. Stir in half of the grated Parmesan cheese and mix well.

            Transfer to Oven: Smooth out the mixture into an even layer in the skillet. Sprinkle the remaining Parmesan cheese on top.

              Bake: Place the skillet in the preheated oven and bake for 20-25 minutes, or until the top is golden and bubbly.

                Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil if desired. Serve warm and enjoy!
