12 oz cheese tortellini (fresh or frozen)

1 cup sun-dried tomatoes, oil-packed and chopped

1 cup cherry tomatoes, halved

1 cup baby spinach, roughly chopped

1/2 cup black olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup red onion, finely diced

1/4 cup fresh basil leaves, chopped

1/4 cup olive oil

2 tablespoons balsamic vinegar

1 teaspoon garlic powder

Salt and pepper to taste

Instructions
 

Cook the Tortellini: In a large pot of salted boiling water, cook the tortellini according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Dressing: In a small bowl, whisk together olive oil, balsamic vinegar, garlic powder, salt, and pepper. Adjust seasoning as needed.

      Combine Ingredients: In a large mixing bowl, combine the cooked tortellini, sun-dried tomatoes, cherry tomatoes, baby spinach, black olives, red onion, feta cheese, and basil leaves.

        Add Dressing: Pour the dressing over the tortellini salad and gently toss to ensure everything is evenly coated.
