4 salmon fillets, skinless

1 cup fresh spinach, chopped

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 clove garlic, minced

1 tablespoon lemon zest

1 tablespoon olive oil

Salt and pepper to taste

Toothpicks or kitchen twine for securing

Instructions
 

Preheat your oven to 375°F (190°C).

    In a bowl, combine the chopped spinach, ricotta cheese, grated Parmesan, minced garlic, olive oil, lemon zest, salt, and pepper. Mix well until everything is evenly incorporated.

      Lay the salmon fillets on a clean, flat surface, skin-side down. Gently pound the fillets with a meat mallet to make them more pliable and even in thickness.

        Spread a generous layer of the spinach-ricotta mixture over each salmon fillet, leaving a small border around the edges.

          Starting from one end, carefully roll each fillet tightly into a pinwheel shape. Secure the ends with toothpicks or tie with kitchen twine to keep the filling inside while cooking.

            Place the stuffed salmon pinwheels on a parchment-lined baking sheet.

              Bake in the preheated oven for about 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.

                Remove from the oven, let rest for a few minutes, and then remove the toothpicks or twine.
