1 medium head of green cabbage

1 cup uncooked jasmine rice

1 lb ground beef (or turkey for a lighter version)

1 cup chopped onion

2 cloves garlic, minced

1 cup diced tomatoes (canned or fresh)

1 teaspoon paprika

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup fresh parsley, chopped

1 jar (24 oz) marinara sauce

1 cup shredded mozzarella cheese (optional)

2 tablespoons olive oil

Instructions
 

Prepare the Cabbage: Bring a large pot of salted water to a boil. Carefully remove the core from the cabbage and gently peel off 12 large leaves. Blanch the leaves in boiling water for 2-3 minutes until softened, then transfer to a bowl of ice water. Drain and set aside.

    Cook the Rice: In a small pot, cook the jasmine rice according to package instructions. Once cooked, fluff with a fork and set aside to cool.

      Make the Filling: In a large skillet over medium heat, heat olive oil. Add chopped onion and garlic, cooking until fragrant and translucent (about 4-5 minutes). In a large bowl, combine the cooked rice, ground beef, diced tomatoes, paprika, oregano, salt, pepper, and fresh parsley. Mix until well combined.

        Stuff the Rolls: Place a blanched cabbage leaf on a clean surface. Spoon about 2-3 tablespoons of the filling onto the bottom of the leaf. Roll the sides in and then roll from the bottom to the top, securing it snugly. Repeat with remaining leaves and filling.

          Prepare the Sauce: In a large baking dish, spread a thin layer of marinara sauce on the bottom. Place the stuffed cabbage rolls seam-side down in the dish. Top with the remaining marinara sauce and sprinkle with shredded mozzarella cheese if using.

            Bake: Cover the dish with aluminum foil and bake in preheated oven at 350°F (175°C) for 45 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
