2 cups fresh strawberries, hulled and sliced

3/4 cup granulated sugar, divided

1 cup heavy cream

1 cup whole milk

1 vanilla bean, split and seeds scraped (or 2 teaspoons pure vanilla extract)

1 tablespoon lemon juice

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries with 1/4 cup of sugar and lemon juice. Toss to coat and let them sit for about 30 minutes, allowing the strawberries to release their juices.

    Blend the Base: In a blender or food processor, combine the macerated strawberries (including the juice) and blend until smooth, leaving some small chunks for texture if desired. Set aside.

      Mix the Cream Base: In a separate mixing bowl, whisk together the heavy cream, whole milk, the remaining 1/2 cup of sugar, vanilla bean seeds (or vanilla extract), and a pinch of salt until the sugar is fully dissolved.

        Combine Mixtures: Fold the strawberry puree into the cream mixture, stirring gently to combine while still keeping some strawberry pieces intact for added texture.
