Ingredients
  

2 cups fresh strawberries, hulled and halved

1 cup granulated sugar

1/2 cup water

1 tablespoon lemon juice

1/2 teaspoon vanilla extract (optional)

A pinch of salt

Instructions
 

In a medium saucepan, combine the halved strawberries, sugar, water, and a pinch of salt.

    Cook over medium heat, stirring occasionally. Bring the mixture to a gentle simmer and allow it to cook for about 10-15 minutes, or until the strawberries have softened and released their juices.

      Using a potato masher or fork, gently mash the strawberries to release more juice and break them down to your desired texture (smooth or chunky).

        Add the lemon juice and, if using, the vanilla extract. Stir well to combine and continue cooking for another 2-3 minutes.

          Remove the saucepan from heat and let it cool slightly.

            Strain the syrup through a fine-mesh sieve into a clean jar or container to remove the strawberry solids. Use the back of a spoon to press down on the solids to extract as much liquid as possible.

              Allow the syrup to cool completely before sealing the jar. Store in the refrigerator for up to two weeks.
