Ingredients

1 cup fresh strawberries, hulled and sliced

2 tablespoons granulated sugar

1 tablespoon lemon juice

1 package (8 oz) cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 cup whipped cream (store-bought or homemade)

1 package (10 oz) of store-bought shortcake rolls

1/2 cup crushed graham crackers

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Strawberries: In a mixing bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss well and let them sit for about 15 minutes to draw out their juices.

Make the Cheesecake Filling: In another bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and vanilla extract, mixing until fully incorporated. Gently fold in the whipped cream until the mixture is fluffy and combined.

Assemble the Rolls: Carefully unroll each shortcake roll. Spread a generous layer of the cheesecake filling over each roll, making sure to leave a small border around the edges. Spoon some macerated strawberries onto the filling, spreading them evenly.

Roll Up: Starting from one end, roll the shortcake tightly to form a log. Repeat this step for all the rolls and place them seam-side down on a cutting board.

Coat with Crumbs: Roll each log in the crushed graham crackers until well coated. You can press gently to ensure the crumbs stick nicely.

Chill: Place the rolls in the refrigerator for at least 30 minutes to firm up and allow the flavors to meld.

Slice and Serve: Once chilled, slice each roll into bite-sized pieces. Arrange them on a serving platter and garnish with fresh mint leaves if desired. Drizzle with any remaining strawberry juice from the bowl as an extra touch.
