1 cup sour cream

2 cups all-purpose flour

1 tablespoon baking powder

2 tablespoons sugar

½ teaspoon salt

½ cup unsalted butter, cold and cubed

¾ cup whole milk

1 teaspoon vanilla extract

For the Strawberry Topping:

4 cups fresh strawberries, hulled and sliced

½ cup granulated sugar

1 tablespoon lemon juice

1 cup whipped cream (for serving)

Mint leaves (for garnish)

Instructions
 

Prepare the Cheesecake Layer:

    - Preheat your oven to 325°F (160°C).

      - In a mixing bowl, beat the softened cream cheese with sugar until smooth and creamy.

        - Add vanilla extract and mix again.

          - Beat in the eggs one at a time, blending well after each addition.

            - Finally, fold in the sour cream until fully combined.

              - Pour the cheesecake mixture into a greased 9-inch springform pan and smooth the top.

                - Bake for 50-60 minutes or until the edges are set, but the center still jiggles slightly. Let it cool completely in the oven with the door slightly ajar to prevent cracking.

                  Prepare the Shortcake Layer:

                    - In a large bowl, whisk together the flour, baking powder, sugar, and salt.

                      - Add the cold, cubed butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

                        - Stir in the milk and vanilla extract until just combined.

                          - Turn the dough out onto a lightly floured surface and pat it into a circle about 1-inch thick.

                            - Cut into rounds using a biscuit cutter or a glass and place them on a baking sheet.

                              - Bake at 400°F (200°C) for 15-20 minutes or until golden brown. Let them cool.
