Ingredients

2 cups fresh strawberries, hulled and sliced

1 cup sweetened condensed milk

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 tablespoon lemon juice

1 pre-made graham cracker crust

Fresh strawberries and mint leaves for garnish (optional)

Instructions

In a large mixing bowl, combine the sliced strawberries and lemon juice. Toss gently to coat the strawberries in the juice to enhance their flavor. Set aside.

In another bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.

In a separate bowl, mix the sweetened condensed milk with the prepared strawberries, carefully folding them together so the strawberries remain intact.

Gently fold the whipped cream into the strawberry and condensed milk mixture until well combined. Be careful not to deflate the whipped cream.

Pour the mixture into the pre-made graham cracker crust, smoothing the top with a spatula.

Cover the pie with plastic wrap or foil and place it in the refrigerator for at least 4 hours, or preferably overnight, to allow it to set properly.

Once set, remove from the refrigerator. Garnish with additional fresh strawberries and mint leaves if desired.

Slice, serve, and enjoy your refreshing Strawberry Icebox Pie!
