Ingredients

1 cup crushed graham crackers

½ cup unsalted butter, melted

2 tbsp granulated sugar

8 oz cream cheese, softened

½ cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

1 cup strawberries, diced

½ cup strawberry jam

A pinch of salt

Mini taco-shaped dessert shells (store-bought or homemade)

Fresh strawberries for garnish

Instructions

In a mixing bowl, combine the crushed graham crackers, melted butter, and granulated sugar until the mixture resembles wet sand.

Press the mixture firmly into the base of each taco shell to form a crunchy base. Set aside to firm up while you prepare the cheesecake filling.

In another bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.

In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.

In a small bowl, mix diced strawberries and strawberry jam together.

Carefully spoon the cheesecake mixture into each taco shell, filling them generously without overfilling.

Top each cheesecake-filled taco with a spoonful of the strawberry jam and fresh strawberry mixture.

Optional: Sprinkle any leftover crushed graham crackers on top for added crunch.

Chill the tacos in the refrigerator for at least 30 minutes to allow flavors to meld and set.

Serve cool, garnished with additional fresh strawberries if desired. Enjoy your delightful dessert!
