1 cup fresh strawberries, hulled and sliced

2 tablespoons granulated sugar

1 teaspoon lemon juice

For the Cheesecake Filling:

8 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup heavy whipping cream

For the Crunch Topping:

1 cup crushed graham crackers

1/4 cup unsalted butter, melted

2 tablespoons brown sugar

For Assembly:

6 waffle cones

Fresh strawberry slices for garnish (optional)

Instructions
 

Prepare the Strawberry Layer:

    - In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss to mix well. Let it sit for about 15 minutes to release the juices and create a sweet syrup.

      Make the Cheesecake Filling:

        - In a mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.

          - In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined and fluffy.

            Create the Crunch Topping:

              - In a another bowl, mix the crushed graham crackers, melted butter, and brown sugar until evenly moistened. The mixture should be crumbly but hold together when pressed.

                Assemble the Cones:

                  - Take a waffle cone and first add a spoonful of the strawberry mixture to the bottom.

                    - Next, pipe or spoon in a generous layer of the cheesecake filling on top of the strawberries.

                      - Add a layer of the crunch topping, gently pressing it down to create a satisfying texture.

                        - Repeat the layers (strawberries, cheesecake filling, crunch) until the cone is filled to the top.

                          - Optionally, garnish with fresh strawberry slices on the top of each cone.

                            Chill and Serve:

                              - Place the filled cones upright in a glass or a muffin tin to hold them in place while you chill them in the refrigerator for about 30 minutes before serving.
