Ingredients
  

8 slices of thick brioche or challah bread

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh strawberries, hulled and diced

2 large eggs

1 cup milk

1 teaspoon cinnamon

1 tablespoon butter (for cooking)

Additional strawberries and powdered sugar for serving

Instructions
 

In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.

    Gently fold in the diced strawberries into the cream cheese mixture. This will be your cheesecake filling.

      Take a slice of brioche or challah bread, and spread about 2-3 tablespoons of the strawberry cheesecake filling on one slice. Top it with another slice of bread to create a sandwich. Repeat with the remaining slices.

        In a separate bowl, whisk together the eggs, milk, and cinnamon until well combined to create your French toast batter.

          Heat a large skillet or griddle over medium heat and add the butter, allowing it to melt and coat the pan.

            Dip each stuffed sandwich into the egg mixture, ensuring that both sides are well-coated.

              Place the stuffed sandwiches in the skillet and cook for about 3-4 minutes on each side, or until golden brown and cooked through.

                Once done, transfer to a plate and repeat with the remaining stuffed bread.

                  Serve warm, topped with additional fresh strawberries and a dusting of powdered sugar.
