3/4 cup granulated sugar

3/4 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

2 1/4 cups all-purpose flour

1 teaspoon baking soda

8 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup diced fresh strawberries

1 tablespoon lemon juice

Instructions
 

Prepare the Cheesecake Filling:

    - In a mixing bowl, beat the softened cream cheese until smooth.

      - Add the powdered sugar, vanilla extract, and lemon juice, mixing until well combined.

        - Gently fold in the diced strawberries. Refrigerate the filling for about 30 minutes to firm up.

          Make the Cookie Dough:

            - Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

              - In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

                - Beat in the egg and vanilla extract until combined.

                  - In another bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture until just combined. If using, fold in the chocolate chips.

                    Assemble the Cookies:

                      - Take a tablespoon of cookie dough and flatten it in your hand. Spoon about 1 tablespoon of the chilled cheesecake filling into the center, then fold the dough around the filling, sealing it well to avoid leaks.

                        - Roll the filled dough into a ball and place it on the prepared baking sheet. Repeat with the remaining dough and filling, spacing the cookies about 2 inches apart.
