1 cup fresh strawberries, hulled and diced

1 tablespoon granulated sugar

1 teaspoon vanilla extract

8 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon lemon juice

10 eggroll wrappers

1 egg, beaten (for sealing)

Oil for frying (such as vegetable or canola)

Powdered sugar for dusting

Whipped cream for serving (optional)

Instructions
 

In a small bowl, combine the diced strawberries, granulated sugar, and vanilla extract. Toss gently to coat and set aside to macerate for about 10 minutes.

    In another bowl, beat the softened cream cheese with the powdered sugar and lemon juice until smooth and creamy. This will be your cheesecake filling.

      Lay one eggroll wrapper on a clean surface, with one corner pointing towards you (so it looks like a diamond shape).

        Place about 1 tablespoon of the cream cheese mixture in the center of the wrapper, followed by a few teaspoons of the macerated strawberries on top of the cream cheese.

          Brush the edges of the wrapper with the beaten egg. Fold the bottom corner over the filling, then fold in the side corners and roll tightly to seal the eggroll. Repeat with the remaining wrappers and filling.

            In a deep pan or fryer, heat oil to 350°F (175°C). Carefully add the eggrolls a few at a time, avoiding overcrowding, and fry for about 2-3 minutes on each side, or until golden brown and crispy.

              Use a slotted spoon to transfer the eggrolls to a paper towel-lined plate to drain excess oil.

                Once they have cooled slightly, dust with powdered sugar before serving, and add a dollop of whipped cream on the side, if desired.
