Ingredients

1 cup fresh strawberries, hulled and sliced

1 ripe banana, sliced

2 cups milk (whole or almond milk for a dairy-free option)

1 cup heavy cream (or coconut cream for a dairy-free option)

1/2 cup granulated sugar

1/3 cup cornstarch

1 teaspoon vanilla extract

1/4 teaspoon salt

1 package (about 14 oz) vanilla wafers (or gluten-free cookies for a gluten-free version)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Fruit: In a small bowl, layer sliced strawberries and bananas. Sprinkle with 2 tablespoons of sugar and let it sit for about 10 minutes to release some juices.

Make the Pudding Base: In a medium saucepan, whisk together the cornstarch, remaining sugar, and salt. Gradually add milk while whisking continuously to prevent lumps. Heat the mixture over medium heat, stirring constantly until it thickens and begins to bubble (about 7-10 minutes).

Incorporate Cream and Vanilla: Once thickened, remove the saucepan from heat. Stir in the heavy cream and vanilla extract until well combined. Allow it to cool slightly.

Layer the Dessert: In a large serving dish or individual cups, layer the bottom with vanilla wafers. Spoon a layer of the pudding mix over the wafers, followed by a layer of the strawberry-banana mixture. Repeat the layers until the dish is full, ending with pudding on top.

Chill: Cover with plastic wrap and refrigerate for at least 3 hours or until set.

Serve: Before serving, garnish with fresh mint leaves and a few extra slices of strawberries and bananas on top. Enjoy your delicious Strawberry Banana Bliss Pudding!
