4 chicken thighs (bone-in, skin-on for extra flavor)

1 cup apricot preserves

3 tablespoons soy sauce

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

2 cloves garlic, minced

1 teaspoon ground ginger

1/2 teaspoon black pepper

1 teaspoon salt

1 tablespoon olive oil

1 tablespoon sesame oil (optional)

Fresh cilantro, chopped (for garnish)

Sesame seeds (for garnish)

Cooked rice (for serving)

Instructions
 

Preheat Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare Marinade: In a mixing bowl, combine the apricot preserves, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, ground ginger, black pepper, and salt. Mix well to create a smooth marinade.

      Marinate Chicken: Place the chicken thighs in a large zip-lock bag or a shallow dish, then pour the marinade over the chicken, ensuring that each piece is well-coated. Seal the bag or cover the dish and let it marinate for at least 30 minutes (or up to 4 hours in the fridge for deeper flavor).

        Sear Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Remove chicken from the marinade (reserve the marinade for later) and sear the chicken thighs, skin-side down, for about 5-6 minutes until golden brown. Flip and cook for an additional 3 minutes.

          Bake Chicken: Pour the reserved marinade over the seared chicken in the skillet. If desired, drizzle sesame oil on top for added flavor. Transfer the skillet to the preheated oven.

            Cook Thoroughly: Bake the chicken for 25-30 minutes, or until the internal temperature reaches 165°F (75°C) and the chicken is sticky and caramelized.

              Garnish: Once done, remove the skillet from the oven and let the chicken rest for a few minutes. Garnish with chopped cilantro and sesame seeds.

                Serve: Serve the sticky apricot chicken over a bed of cooked rice, drizzling extra sauce from the skillet over the top.
