Ingredients
  

1 cup split peas, rinsed and drained

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 medium potato, peeled and diced

4 cups vegetable broth or water

1 cup cooked ham, diced

1 teaspoon dried thyme

1 bay leaf

Salt and pepper to taste

Fresh parsley, for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onions and sauté until translucent, about 5 minutes.

    Stir in the garlic, carrots, and celery, cooking for an additional 3-4 minutes until they begin to soften.

      Add the diced potato and split peas to the pot, stirring to combine.

        Pour in the vegetable broth (or water) and add the diced ham, thyme, bay leaf, salt, and pepper. Bring the mixture to a boil.

          Once boiling, reduce the heat to low and cover the pot. Simmer for about 45-60 minutes, or until the split peas are tender and the soup has thickened. Stir occasionally to prevent sticking.

            Remove the bay leaf and adjust seasoning with additional salt and pepper, if preferred.

              For a creamier texture, you can use an immersion blender to partially puree the soup, leaving some chunky bits for texture.

                Serve hot, garnished with fresh parsley for a burst of color and flavor.
