1 cup orzo pasta

2 cups fresh spinach, chopped

1 cup mushrooms, sliced (button or cremini)

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup vegetable broth

1/2 cup heavy cream (or coconut cream for a vegan option)

1/4 cup grated Parmesan cheese (optional)

2 tablespoons olive oil

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Orzo: In a large pot, bring salted water to a boil and add the orzo. Cook according to package instructions until al dente, then drain and set aside.

    Sauté the Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onions and sauté until translucent, about 3-4 minutes. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are browned, around 5-7 minutes.

      Add Spinach and Herbs: Stir in the chopped spinach and dried thyme, cooking until the spinach wilts, around 2-3 minutes. Season with salt and pepper to taste.

        Make the Sauce: Pour in the vegetable broth and bring to a simmer. Reduce heat and stir in the heavy cream, allowing it to mix well with the vegetables and create a creamy sauce. Let it cook for a couple of minutes to thicken slightly.

          Combine: Add the cooked orzo to the skillet, tossing everything together to ensure the orzo is well coated with the sauce. If using, stir in the grated Parmesan cheese until melted and combined.

            Serve: Remove from heat, garnish with fresh parsley, and serve warm.
