Ingredients

1 pound ground turkey or beef

1 cup fresh spinach, finely chopped

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

3 cloves garlic, minced

1 large egg

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 cup small mozzarella balls (bocconcini or ciliegine)

Olive oil for cooking

Marinara sauce (for serving, optional)

Instructions

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large mixing bowl, combine the ground meat, chopped spinach, breadcrumbs, Parmesan cheese, parsley, minced garlic, egg, oregano, salt, and pepper. Mix everything well until fully combined.

Prepare the mozzarella: Take a small amount of the meat mixture (about the size of a golf ball), flatten it in your palm, place a mozzarella ball in the center, and wrap the meat around it to form a complete sphere. Make sure the cheese is completely enclosed. Repeat this for the remaining mixture and mozzarella.

Heat olive oil in a skillet over medium-high heat. Carefully add the meatballs to the skillet and sear them for about 2-3 minutes on each side until they are golden brown. You may need to do this in batches to avoid overcrowding the pan.

Once seared, transfer the meatballs to the prepared baking sheet. Bake in the preheated oven for about 15-20 minutes until the meatballs are cooked through (internal temperature should reach 165°F or 75°C).

Serve the meatballs hot, either on their own or topped with marinara sauce. Pair with pasta, a fresh salad, or bread for a delightful meal.
