Spinach Dip Chicken Pasta

Ingredients
  

8 oz. penne pasta

1 lb. chicken breast, diced

2 cups fresh spinach, chopped

1 cup cream cheese, softened

1/2 cup sour cream

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

2 cloves garlic, minced

1/4 tsp red pepper flakes (optional)

Salt and pepper to taste

2 tbsp olive oil

1/4 cup chicken broth or pasta water (for consistency)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1/4 cup of the pasta water.

    Sauté Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until the chicken is no longer pink, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Make the Spinach Dip Sauce: In the same skillet, add minced garlic and red pepper flakes. Sauté for 1 minute until fragrant. Add the chopped spinach and cook until wilted, about 2-3 minutes.

        Combine Ingredients: Lower the heat and add the cream cheese and sour cream to the skillet, stirring until combined and creamy. Gradually mix in the Parmesan cheese until melted. Add in a splash of chicken broth or reserved pasta water to reach a smooth consistency.

          Add Chicken & Pasta: Return the cooked chicken to the skillet and then add the cooked penne pasta. Toss everything together until the pasta is well-coated in the sauce. If the mixture is too thick, add additional pasta water to achieve your desired consistency.

            Final Touches: Stir in the shredded mozzarella until melted and bubbly. Taste and adjust seasoning with more salt, pepper, or red pepper flakes if desired.

              Serve: Garnish with fresh parsley and extra Parmesan cheese. Serve warm and enjoy!
