For the Stuffed Salmon:

4 salmon fillets (6 oz each)

1 cup fresh spinach, chopped

8 oz crab meat, lump or claw

1/2 cup cream cheese, softened

1/4 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 garlic clove, minced

1 tablespoon Dijon mustard

Salt and pepper to taste

Olive oil for drizzling

For the Lemon Cream Sauce:

1 cup heavy cream

1/2 cup sour cream

1 lemon (zest and juice)

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

Salt and pepper to taste

Instructions
 

Prepare the Filling: In a medium bowl, combine the chopped spinach, crab meat, cream cheese, breadcrumbs, Parmesan cheese, minced garlic, Dijon mustard, salt, and pepper. Mix gently until evenly combined. Set aside.

    Prepare the Salmon: Preheat your oven to 375°F (190°C). Using a sharp knife, make a slit in the side of each salmon fillet to create a pocket for the stuffing. Be careful not to cut all the way through.

      Stuff the Salmon: Generously fill each salmon pocket with the spinach and crab mixture. Use toothpicks to secure if necessary. Place the stuffed salmon fillets on a baking sheet lined with parchment paper. Drizzle olive oil over the top and season with a sprinkle of salt and pepper.

        Bake: Bake the salmon in the preheated oven for about 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.

          Make the Lemon Cream Sauce: While the salmon is baking, prepare the sauce. In a small saucepan over medium heat, combine the heavy cream, sour cream, lemon zest, and lemon juice. Cook, stirring frequently, until heated through. Add the dill, salt, and pepper to taste, and stir well.

            Serve: Once the salmon is cooked, remove it from the oven and let it rest for a couple of minutes. Serve the stuffed salmon fillets drizzled with the lemon cream sauce. Garnish with additional dill if desired.
