Ingredients
  

1 lb (450g) boneless chicken thighs, thinly sliced

2 tablespoons vegetable oil

4 cloves garlic, minced

1-2 Thai red chilies, sliced (adjust according to spice preference)

1 bell pepper, thinly sliced (red or green)

1 medium onion, sliced

1 cup fresh Thai basil leaves

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon fish sauce

1 tablespoon sugar (or palm sugar)

1 tablespoon lime juice

Cooked jasmine rice, for serving

Optional: chopped peanuts and lime wedges for garnish

Instructions
 

Prep the Chicken: Start by thinly slicing the chicken thighs into bite-sized pieces and set aside.

    Make the Sauce: In a small bowl, combine soy sauce, oyster sauce, fish sauce, sugar, and lime juice. Mix until sugar is dissolved, and set aside.

      Cook the Chicken: Heat the vegetable oil in a large wok or skillet over medium-high heat. Add the minced garlic and sliced red chilies, sautéing for about 30 seconds until fragrant.

        Stir-Fry: Add the sliced chicken to the wok. Stir-fry for 4-5 minutes or until the chicken is cooked through and slightly browned.

          Add Vegetables: Stir in the sliced onion and bell pepper. Cook for an additional 2-3 minutes until the vegetables are just tender but still vibrant.

            Combine with Sauce: Pour the pre-mixed sauce into the wok, stirring to coat the chicken and vegetables evenly. Let it cook for 1-2 minutes, allowing the sauce to thicken slightly.

              Add Basil: Turn off the heat, and fold in the fresh Thai basil leaves. Let them wilt slightly from the residual heat.

                Serve: Serve the spicy Thai basil chicken stir-fry hot over a bed of jasmine rice. Optional: Garnish with chopped peanuts and lime wedges for an extra flavor kick.
