2 cups fresh corn kernels (about 4 ears of corn)

1 ripe mango, diced

1 medium red onion, finely chopped

1 small habanero pepper, finely diced (adjust to taste)

1 red bell pepper, finely diced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon cumin

Salt and black pepper to taste

Prepare the Corn: If using fresh corn, remove the kernels from the cobs and blanch them in boiling water for 2-3 minutes. Drain and cool. If using canned corn, drain and rinse thoroughly.

    Mix Ingredients: In a large mixing bowl, combine the corn, diced mango, red onion, habanero pepper, and red bell pepper.

      Add Flavor: Squeeze the lime juice over the mixture. Add the cumin, salt, and black pepper, and toss everything together gently until well combined.

        Add Cilantro: Fold in the chopped cilantro for a fresh burst of flavor.

          Chill: Cover the salsa with plastic wrap and let it sit in the refrigerator for at least 30 minutes to allow the flavors to meld.
