Spicy Coconut Curry Scallops

Ingredients
  

1 lb sea scallops, patted dry

1 can (14 oz) coconut milk

1 tablespoon olive oil

1 tablespoon butter

1 tablespoon red curry paste (adjust to taste)

2 cloves garlic, minced

1 inch piece fresh ginger, grated

1 red bell pepper, thinly sliced

1 cup snap peas

1 tablespoon fish sauce

2 teaspoons lime juice

Fresh cilantro, for garnish

Salt and pepper, to taste

Cooked jasmine rice, for serving

Instructions
 

In a large skillet, heat the olive oil over medium-high heat. Add the butter once the oil is hot.

    Season the scallops with salt and pepper. Once the butter is melted and bubbling, add the scallops to the pan in a single layer. Sear for about 2-3 minutes on each side, or until golden brown and just cooked through. Remove from the skillet and set aside.

      In the same skillet, add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.

        Stir in the red curry paste and continue to cook for an additional minute.

          Pour in the coconut milk and stir until the curry paste is fully incorporated. Bring the mixture to a simmer.

            Add the sliced red bell pepper and snap peas to the skillet. Cook for 4-5 minutes until the vegetables are tender but still vibrant.

              Stir in the fish sauce and lime juice. Taste the sauce and adjust the seasoning if needed.

                Gently return the scallops to the skillet, allowing them to warm through in the spicy curry sauce for 1-2 minutes.

                  Serve the spicy coconut curry scallops over cooked jasmine rice and garnish with fresh cilantro.
