Spicy Coconut Curry Ramen

Ingredients
  

2 packs of ramen noodles (fresh or dried)

1 can (400ml) coconut milk

2 tablespoons red curry paste

1 tablespoon soy sauce

1 tablespoon fish sauce (optional for extra umami)

2 cups vegetable broth (or chicken broth)

1 tablespoon vegetable oil

1 medium onion, diced

3 cloves garlic, minced

1-inch piece ginger, grated

1 red bell pepper, sliced

1 cup snap peas, trimmed

1 cup mushrooms, sliced (shiitake or button)

1 small zucchini, julienned

1 lime, juiced

Fresh cilantro, for garnish

Sliced green onions, for garnish

Chili flakes or fresh chilies, to taste

Instructions
 

In a large pot, heat the vegetable oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

    Stir in the minced garlic and grated ginger, and continue to sauté for another minute until fragrant.

      Add the red curry paste, stirring to coat the onions, garlic, and ginger, allowing it to cook for another minute to deepen the flavors.

        Pour in the vegetable broth and coconut milk, mixing until well combined. Bring the mixture to a gentle simmer.

          Add the soy sauce and fish sauce (if using) to the pot, adjusting the seasoning to your taste.

            Add the sliced red bell pepper, snap peas, and mushrooms. Let them cook in the simmering broth for about 5-7 minutes, or until they're suitably tender.

              Meanwhile, cook the ramen noodles according to package instructions. Drain and set aside.

                Just before serving, stir in the julienned zucchini and lime juice. Allow to heat through for another minute.

                  Place a portion of the cooked ramen noodles in a bowl and ladle the spicy coconut curry broth along with the vegetables over the top.

                    Garnish with fresh cilantro, sliced green onions, and a sprinkle of chili flakes or fresh chilies for extra heat.
