Spicy Cheese-Stuffed Jalapeño Snacks

12 large jalapeño peppers

8 oz cream cheese, softened

1 cup shredded sharp cheddar cheese

1/2 cup crumbled feta cheese

2 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

1/4 cup green onions, finely chopped

1/2 cup cooked bacon bits (optional)

Salt and pepper to taste

Olive oil (for drizzling)

1/2 cup panko breadcrumbs (optional, for crunch)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Jalapeños: Slice the jalapeños in half lengthwise and remove the seeds and membranes for less heat (or leave them in for extra spice!).

      Make the Cheese Filling: In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled feta cheese, minced garlic, smoked paprika, cayenne pepper, green onions, bacon bits (if using), and a pinch of salt and pepper. Mix well until all ingredients are incorporated.

        Stuff the Jalapeños: Generously stuff each jalapeño half with the cheese mixture, pressing it in to fill completely.

          Optional Crunch: If you want a crispy topping, sprinkle panko breadcrumbs over each stuffed jalapeño.

            Drizzle and Bake: Place the stuffed jalapeños on a baking sheet lined with parchment paper. Drizzle lightly with olive oil. Bake in the preheated oven for 20-25 minutes, or until the jalapeños are tender and the cheese is bubbly and golden.

              Serve: Allow to cool slightly before serving. These snacks are great warm or at room temperature!
