4 large bell peppers (red, yellow, or green)

2 cups shredded cooked chicken (leftover rotisserie chicken works great)

1/2 cup Buffalo wing sauce (adjust to taste for spiciness)

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/4 cup blue cheese crumbles (optional)

1/4 cup green onions, chopped (for garnish)

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

Olive oil (for drizzling)

Instructions
 

Preheat the oven to 375°F (190°C).

    Prepare the peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Lightly drizzle the outer side with olive oil and place them upright in a baking dish.

      Make the filling: In a large mixing bowl, combine the shredded chicken, Buffalo wing sauce, softened cream cheese, half of the shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Stir until everything is well mixed and the chicken is thoroughly coated in the sauce.

        Stuff the peppers: Generously fill each bell pepper with the Buffalo chicken mixture, pressing it down gently to pack it in. Once filled, sprinkle the remaining cheddar cheese on top of each pepper. If using, add blue cheese crumbles as well.

          Bake: Cover the baking dish with aluminum foil (this will help the peppers cook through). Bake in the preheated oven for 25-30 minutes. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is bubbling and golden.
