2 cups fresh spinach, chopped

1 cup sun-dried tomatoes, julienned (packed in oil)

1 cup heavy cream

1 cup grated Parmesan cheese

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh basil leaves for garnish

Cook the Spaghetti: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside, reserving about 1 cup of the pasta water.

    Prepare the Sauce: In a large skillet over medium heat, add olive oil and minced garlic. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

      Add Sun-Dried Tomatoes: Stir in the sun-dried tomatoes and red pepper flakes. Cook for an additional 2-3 minutes to let the flavors meld.

        Incorporate Spinach: Add the chopped spinach to the skillet, stirring until it wilts down, about 2 minutes.

          Make it Creamy: Pour in the heavy cream and bring to a gentle simmer. Allow it to cook for another 2-3 minutes, then stir in the Parmesan cheese until melted and the sauce is creamy. If the sauce is too thick, gradually add reserved pasta water until you reach the desired consistency.
