Smothered Chicken with Creamed Spinach Bacon And Mushrooms

For the Chicken:

4 boneless, skinless chicken thighs

2 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon dried thyme

For the Creamed Spinach:

4 cups fresh spinach, chopped

4 strips bacon, diced

1 cup mushrooms, sliced

1 cup heavy cream

1/2 cup cream cheese, softened

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

Salt and pepper, to taste

Pinch of nutmeg (optional)

Instructions
 

Prepare the Chicken:

    - Season chicken thighs with salt, pepper, garlic powder, smoked paprika, and thyme.

      - In a large skillet, heat olive oil over medium-high heat.

        - Add the chicken and sear for about 6-7 minutes on each side until golden brown. Remove from the skillet and set aside.

          Cook the Bacon and Mushrooms:

            - In the same skillet, add the diced bacon and cook until crispy. Remove the bacon with a slotted spoon, leaving the grease in the skillet.

              - Add sliced mushrooms to the skillet and sauté for about 5 minutes until they start to brown.

                Make the Creamed Spinach:

                  - Add minced garlic to the mushrooms in the skillet and cook for an additional minute.

                    - Stir in the chopped spinach and cook until wilted.

                      - Reduce the heat to low, then add the heavy cream and cream cheese. Stir until the cream cheese is melted and incorporated.

                        - Mix in the Parmesan cheese, cooked bacon, salt, pepper, and nutmeg. Simmer for a couple of minutes until thickened.

                          Combine and Finish:

                            - Return the seared chicken to the skillet, nestling it into the creamed spinach mixture. Allow it to simmer for another 5-10 minutes, ensuring the chicken is cooked through and heated.

                              - Taste and adjust seasoning if necessary.
