Ingredients
  

4 chicken thighs (bone-in, skin-on for extra flavor)

Salt and pepper (to taste)

1 tablespoon olive oil

1 medium onion, chopped

4 slices of bacon, diced

8 ounces mushrooms, sliced

2 cloves garlic, minced

1 pound fresh spinach (or substitute with 10 ounces frozen spinach, thawed and drained)

1 cup heavy cream

1 cup chicken broth

1 teaspoon paprika

1 teaspoon Italian seasoning

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Season the chicken thighs with salt and pepper on both sides.

    Brown the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs skin-side down and brown for about 5-7 minutes until the skin is crispy. Flip and sear the other side for another 5 minutes. Remove the chicken from the skillet and set aside.

      Cook Bacon and Vegetables: In the same skillet, add the diced bacon and cook until crispy. Remove the bacon using a slotted spoon and leave the rendered fat in the pan. Add chopped onions and mushrooms; sauté for about 5 minutes until they are soft. Add minced garlic and cook for an additional 1 minute.

        Add Spinach: If using fresh spinach, add it to the skillet and cook until wilted (about 3-4 minutes). If using frozen spinach, stir it in and cook until heated through.

          Make the Cream Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Season with paprika, Italian seasoning, and adjust salt and pepper as needed. Allow the mixture to simmer for about 5 minutes.

            Combine and Simmer: Return the chicken thighs to the skillet, spoon some of the sauce over them, and allow everything to simmer together on low heat for 15-20 minutes, or until the chicken is cooked through and tender.

              Finish the Dish: Remove from heat and stir in the grated Parmesan cheese. Let the dish sit for a few minutes to thicken up.

                Serve: Plate the chicken topped with the creamed spinach, mushrooms, and bacon mixture. Garnish with fresh parsley.
