For the Meatloaf:

1 lb ground beef

1 lb ground pork

1 cup crushed tortilla chips

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1/2 cup diced fresh jalapeños (seeds removed for less heat)

1/2 cup diced onion

2 cloves garlic, minced

2 large eggs

2 tablespoons Worcestershire sauce

1 tablespoon smoked paprika

1 teaspoon cumin

1 tablespoon freshly chopped cilantro

Salt and pepper to taste

For the Creamy Ranch Drizzle:

1/2 cup sour cream

1/4 cup mayonnaise

1 tablespoon ranch seasoning mix

1 teaspoon lemon juice

1 tablespoon milk (to thin, if desired)

Fresh chives for garnish

Instructions
 

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Prepare the Meat Mixture: In a large mixing bowl, combine the ground beef, ground pork, crushed tortilla chips, shredded cheddar cheese, cream cheese, diced jalapeños, onion, minced garlic, eggs, Worcestershire sauce, smoked paprika, cumin, chopped cilantro, and salt and pepper. Mix until all ingredients are well incorporated.

      Shape the Meatloaf: Transfer the meat mixture onto the prepared baking sheet and shape it into a loaf. Smooth out the top to create an even surface.

        Bake: Place the meatloaf in the preheated oven and bake for 60-75 minutes or until the internal temperature reaches 160°F (70°C). If the top starts to brown too quickly, cover it loosely with aluminum foil.

          Make the Creamy Ranch Drizzle: While the meatloaf is baking, whisk together the sour cream, mayonnaise, ranch seasoning, lemon juice, and milk in a small bowl until smooth. Adjust the milk to your desired consistency.

            Remove and Rest: Once the meatloaf is done, take it out of the oven and allow it to rest for about 10 minutes. This will help retain moisture when slicing.

              Serve: Slice the meatloaf and drizzle the creamy ranch sauce over the top. Garnish with fresh chives for a pop of color.
