At its core, pulled pork is a culinary technique that involves slow-cooking pork until it becomes tender enough to be easily shredded. This method has its origins in Southern barbecue traditions, where various cuts of pork are cooked low and slow, allowing the meat to absorb flavors and become incredibly tender. The most popular cut for making pulled pork is the pork shoulder, also known as the Boston butt or pork butt. This cut is ideal due to its marbling and connective tissue, which breaks down during the long cooking process, resulting in moist and flavorful meat.

Ingredients

2 lbs pork shoulder (also known as pork butt)

2 tablespoons olive oil

1 onion, diced

4 cloves garlic, minced

1 tablespoon smoked paprika

2 teaspoons ground cumin

1 teaspoon dried oregano

1 tablespoon brown sugar

2-3 chipotle peppers in adobo sauce, minced (adjust for heat preference)

1 cup barbecue sauce (smoky variety recommended)

1/2 cup chicken broth

Salt and pepper to taste

Corn tortillas

Toppings: diced avocado, chopped fresh cilantro, lime wedges, and crumbled queso fresco

Instructions

Prepare the Pork: Season the pork shoulder generously with salt and pepper. Cut it into large chunks to help it cook evenly.

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent (about 5 minutes). Stir in the minced garlic and cook for an additional minute until fragrant.

Make the Spice Mix: In a small bowl, combine the smoked paprika, ground cumin, dried oregano, and brown sugar. Add the minced chipotle peppers and mix to create a spice paste.

Brown the Pork: Add the pork to the skillet with the onions and garlic. Sprinkle the spice mix over the pork and sear on all sides until browned (about 3-4 minutes per side).

Slow Cook: Transfer the browned pork and the remaining contents of the skillet to a slow cooker. Pour in the barbecue sauce and chicken broth, mixing to combine.

Cook the Pork: Cover and cook on low for 8 hours, or until the pork is tender and easily pulls apart with a fork.

Shred the Pork: Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the sauce in the slow cooker and stir well to coat.

Assemble Tacos: Warm the corn tortillas on a skillet or in the microwave. Place a generous amount of the pulled pork onto each tortilla. Top with diced avocado, chopped cilantro, and crumbled queso fresco. Serve with lime wedges on the side.

Prep Time: 15 minutes | Total Time: 8 hours 15 minutes | Servings: 6-8 tacos
