12 oz fettuccine pasta

1 lb smoked sausage (such as andouille or kielbasa), sliced

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

2 cups heavy cream

1 cup grated Parmesan cheese

1 tablespoon Cajun seasoning (adjust to taste)

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Sausage: In a large skillet over medium heat, add the olive oil. Once hot, add the sliced smoked sausage and cook until slightly browned, about 5-7 minutes. Remove the sausage from the pan and set aside.

      Sauté the Vegetables: In the same skillet, add the onions and bell pepper. Sauté until softened, about 3-4 minutes. Add the minced garlic and cook for another 1 minute until fragrant.

        Make the Sauce: Pour in the heavy cream and bring to a gentle simmer. Stir in the Cajun seasoning, smoked paprika, salt, and pepper. Mix well and cook for 3-4 minutes, allowing the sauce to thicken slightly.

          Combine Everything: Add the cooked sausage back into the skillet along with the drained fettuccine. Toss until the pasta is coated in the creamy sauce. If the sauce is too thick, gradually add reserved pasta water until you reach the desired consistency.

            Add Cheese: Stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning if necessary.

              Serve: Remove from heat, garnish with chopped parsley, and serve immediately. Enjoy!
