8 oz (225g) pasta (fusilli or penne work well)

4 oz (115g) smoked salmon, sliced into bite-sized pieces

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/4 red onion, finely chopped

1/4 cup capers, rinsed and drained

1/2 cup cream cheese, softened

1/4 cup Greek yogurt

2 tbsp fresh dill, chopped (or 1 tbsp dried dill)

1 tbsp lemon juice

Salt and pepper, to taste

2 cups arugula or spinach (optional for greens)

Zest of 1 lemon (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain and rinse with cold water to cool. Set aside to drain fully.

    Prepare the Dressing: In a bowl, mix together the softened cream cheese, Greek yogurt, lemon juice, fresh dill, and a pinch of salt and pepper until smooth and creamy. You can use a hand mixer or a fork to combine well.

      Combine Ingredients: In a large mixing bowl, add drained pasta, smoked salmon, cherry tomatoes, cucumber, red onion, and capers. Gently toss to combine the ingredients.
