1 lb ground beef (lean)

1 medium onion, diced

2 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups beef broth

1 can (15 oz) diced tomatoes with green chilies

1 cup carrots, diced

1 cup celery, diced

1 tsp Italian seasoning

1/2 tsp salt (to taste)

1/2 tsp black pepper (to taste)

1 package (9 oz) refrigerated cheese tortellini

2 cups fresh spinach, packed

1/2 cup grated Parmesan cheese (plus more for serving)

Fresh basil leaves for garnish (optional)

Instructions
 

Brown the Beef: In a skillet over medium heat, add the ground beef. Cook until browned, about 5-7 minutes. Drain excess fat and set aside.

    Sauté Vegetables: In the same skillet, add the diced onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for an additional minute until fragrant.

      Combine Ingredients: In a slow cooker, combine the browned ground beef, sautéed onion and garlic, crushed tomatoes, diced tomatoes with green chilies, beef broth, carrots, celery, Italian seasoning, salt, and pepper. Stir well to combine.

        Cook: Cover the slow cooker and set it on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender.

          Add Tortellini: About 15-20 minutes before serving, add the cheese tortellini directly into the soup. If you're on low heat, switch to high for this step. Cook until tortellini are tender, about 10-12 minutes.

            Incorporate Spinach: Stir in the fresh spinach until wilted, about 2-3 minutes.

              Finish Up: Just before serving, stir in the grated Parmesan cheese for extra creaminess and flavor. Adjust salt and pepper to taste.

                Serve: Ladle the soup into bowls, garnish with fresh basil and more Parmesan cheese if desired.
