Ingredients

1 (10 oz) can of RoTel diced tomatoes with green chilies

1 (16 oz) block of cream cheese

1 lb ground beef or ground sausage (or a mix)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 tsp garlic powder

1 tsp onion powder

½ tsp cumin

Salt and pepper to taste

Tortilla chips, for serving

Instructions

Brown the Meat: In a skillet over medium heat, cook the ground beef or sausage until browned and fully cooked. Drain any excess fat and set aside.

Prepare the Slow Cooker: Cut the cream cheese into cubes and add it to the slow cooker.

Combine Ingredients: Pour the can of RoTel (undrained) over the cream cheese, then add the cooked meat, garlic powder, onion powder, cumin, salt, and pepper. Stir until well combined.

Cook: Set the slow cooker to low heat and cover. Let it cook for 2-3 hours, stirring occasionally, until the cream cheese is melted and all ingredients are well blended.

Add the Cheeses: Once melted, add the shredded cheddar and Monterey Jack cheeses. Stir to combine and allow to cook for an additional 15-30 minutes, until melted and bubbly.

Serve Warm: Once the dip is creamy and hot, transfer it to a serving bowl or keep it in the slow cooker on the warm setting. Serve with tortilla chips for dipping. Enjoy your delicious dip!
