3 to 4 lbs beef chuck roast

4 medium potatoes, quartered

4 large carrots, cut into 2-inch pieces

1 large onion, chopped

4 cloves garlic, minced

2 cups beef broth

2 tablespoons Worcestershire sauce

2 teaspoons dried thyme

2 teaspoons dried rosemary

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Instructions
 

Sear the Roast: In a large skillet over medium-high heat, add the olive oil. Season the beef chuck roast generously with salt and pepper. Once the oil is hot, sear the roast on all sides (about 4 minutes per side) until it’s nicely browned. Remove from skillet and set aside.

    Prep the Vegetables: In the slow cooker, layer the quartered potatoes, carrots, and chopped onion at the bottom. Sprinkle minced garlic over the veggies for enhanced flavor.
