For the Garlic Butter Ribeye:

2 ribeye steaks (about 1 inch thick)

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried thyme)

1 teaspoon onion powder

Salt and pepper, to taste

1 cup beef broth

1 tablespoon Worcestershire sauce

For the Parmesan Mashed Potatoes:

2 pounds russet potatoes, peeled and cut into chunks

½ cup milk (or cream for extra richness)

4 tablespoons unsalted butter

½ cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Ribeye:

    - Season both ribeye steaks generously with salt, pepper, onion powder, rosemary, and thyme, pressing the spices into the meat.

      - In a skillet over medium-high heat, melt 2 tablespoons of butter. Sear the steaks on both sides until browned (about 3-4 minutes per side). This step adds a depth of flavor.

        Slow Cook the Ribeye:

          - After searing, transfer the steaks to the slow cooker.

            - In the same skillet, add the remaining 2 tablespoons of butter and minced garlic, sauté for 1 minute until fragrant.

              - Stir in the beef broth and Worcestershire sauce, scraping any browned bits from the skillet. Pour this mixture over the ribeye in the slow cooker.

                - Cover and cook on low for 6-7 hours or on high for 3-4 hours until the ribeye is tender and fully cooked.

                  Make the Parmesan Mashed Potatoes:

                    - While the ribeye is cooking, prepare the mashed potatoes. Place the potato chunks in a large pot and cover with cold water. Add a pinch of salt and bring to a boil.

                      - Cook for 15-20 minutes or until the potatoes are fork-tender. Drain and return to the pot.

                        - Add the milk, butter, and Parmesan cheese to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.

                          Serve:

                            - Once the ribeye is cooked, remove it from the slow cooker and let it rest for a few minutes. Slice the meat against the grain.

                              - Plate the Parmesan mashed potatoes and top with the sliced ribeye. Drizzle some of the garlic butter sauce from the slow cooker over the meat.

                                - Garnish with fresh parsley for a pop of color.
