Ingredients

For the Ribeye:

2 ribeye steaks (about 1 inch thick)

2 tablespoons melted garlic butter (made with 3 cloves minced garlic and 2 tablespoons unsalted butter)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

2 sprigs fresh rosemary

1 cup beef broth

For the Parmesan Mashed Potatoes:

2 pounds Yukon Gold potatoes, peeled and cubed

½ cup heavy cream

¼ cup unsalted butter

½ cup grated Parmesan cheese

Salt and pepper to taste

Chopped fresh parsley for garnish (optional)

Instructions

Prepare the Ribeye: In a bowl, mix together the melted garlic butter, garlic powder, onion powder, smoked paprika, salt, and black pepper. Rub this mixture all over the ribeye steaks, ensuring they are well coated.

Slow Cooker Setup: Place the seasoned ribeye steaks in the bottom of the slow cooker. Add the beef broth and the fresh rosemary sprigs on top.

Cook the Ribeye: Cover and cook on low for 6-8 hours or high for 3-4 hours, until the steaks are tender and juicy.

Prepare the Mashed Potatoes: About 30 minutes before the ribeye is done, place the cubed potatoes in a large pot, cover with water, and add a generous pinch of salt. Bring to a boil and cook until tender (about 15-20 minutes).

Mash the Potatoes: Drain the cooked potatoes and return them to the pot. Add the heavy cream, butter, and grated Parmesan cheese. Mash until smooth and creamy. Season with salt and pepper to taste.

Serve: Once the ribeye is cooked, remove it from the slow cooker and let it rest for a few minutes. Slice the steaks against the grain. Plate the ribeye with a generous scoop of Parmesan mashed potatoes on the side. Drizzle some of the cooking juices over the steak for added flavor.

Garnish: Sprinkle with chopped parsley for a touch of color, and enjoy your comforting meal!
