2 lbs beef sirloin, cut into bite-sized cubes

1 lb baby potatoes, halved

1/2 cup unsalted butter

5 cloves garlic, minced

1 medium onion, diced

2 tsp fresh thyme leaves (or 1 tsp dried thyme)

2 tsp fresh rosemary leaves (or 1 tsp dried rosemary)

1 cup beef broth

Salt and pepper, to taste

2 tbsp Worcestershire sauce

1 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Beef:

    - In a large skillet, heat olive oil over medium-high heat. Season the beef cubes with salt and pepper. Add the beef to the skillet in batches, sear on all sides until browned (about 2-3 minutes per side). Remove from heat and transfer the beef to the slow cooker.

      Prepare Vegetables:

        - In the same skillet, add diced onion and cook until softened (about 3-4 minutes). Add minced garlic and sauté for an additional 1 minute until fragrant. Pour this mixture over the beef in the slow cooker.

          Add Potatoes & Seasonings:

            - Add the halved baby potatoes to the slow cooker. Sprinkle thyme, rosemary, salt, and pepper over the mixture. Drizzle Worcestershire sauce on top.

              Melt the Butter:

                - In a small saucepan, melt the butter over low heat. Once melted, stir in the beef broth and let it simmer for about 2 minutes. Pour the garlic butter mixture over the beef and potatoes in the slow cooker.

                  Cook:

                    - Cover and cook on low for 6-8 hours or high for 3-4 hours, until the beef is tender and the potatoes are cooked through.

                      Serve:

                        - Once done, give the beef and potatoes a gentle stir. Taste and adjust seasoning if necessary. Serve hot, garnished with freshly chopped parsley.
