Ingredients

1.5 lbs beef stew meat, cut into bite-sized pieces

2 cups baby potatoes, halved

1/2 cup unsalted butter (1 stick)

6 garlic cloves, minced

1 medium onion, diced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 tablespoon Worcestershire sauce

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1/4 cup fresh parsley, chopped (for garnish)

Instructions

Prepare the Beef: Pat the beef stew meat dry with paper towels, season with salt and pepper, and set aside.

Layer Ingredients: In the bottom of the slow cooker, add the diced onion and halved baby potatoes, spreading them evenly.

Add the Beef: Place the beef pieces on top of the potatoes and onions.

Make the Garlic Butter Sauce: In a small pan over medium heat, melt the butter. Once melted, add minced garlic, thyme, rosemary, and Worcestershire sauce. Stir well and cook for 1-2 minutes until fragrant.

Combine: Pour the garlic butter mixture over the beef and vegetables in the slow cooker, ensuring everything is well coated.

Slow Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the potatoes are fork-tender.

Serve: Once cooked, give the mixture a gentle stir, taste, and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
