Ingredients
  

1 lb boneless, skinless chicken thighs, diced

1 cup smoked sausage, sliced (Andouille or your choice)

1 medium onion, diced

1 green bell pepper, diced

1 red bell pepper, diced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes with green chilies, undrained

1 cup long-grain white rice

4 cups low-sodium chicken broth

2 teaspoons Cajun seasoning

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust for spice preference)

Salt and pepper to taste

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

In the slow cooker, combine the diced chicken, sliced sausage, onion, green bell pepper, red bell pepper, and garlic.

    Add the undrained diced tomatoes, rice, and chicken broth.

      Sprinkle the Cajun seasoning, oregano, thyme, paprika, cayenne pepper, salt, and pepper over the mixture. Stir well to combine all the ingredients.

        Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the rice is tender.

          Once cooked, fluff the jambalaya with a fork and adjust seasoning to taste.

            Serve hot, garnished with sliced green onions and fresh parsley.
